Cedar-Plank Salmon

Cedar keeps the fish moist and perfumes it with smoke. A whole-plank centerpiece.

INGREDIENTS

METHOD

  1. Soak the cedar plank in water for at least 1 hour, weighing it down so it stays under.
  2. Heat a grill to medium, about 375F.
  3. Pat the salmon dry. Rub with butter, then season with salt, pepper and lemon zest.
  4. Set the fillets on the soaked plank and lay the lemon slices over the top.
  5. Close the grill and cook 15 to 20 minutes, until the thickest part flakes and reads 145F (the FDA's safe minimum for fish).
  6. Rest 5 minutes on the plank, scatter with dill, and serve straight off the board.
